1. Size: Less Is More

A Salteña is small. You should be able to eat it in two or three bites, tops. If it looks like a calzone or fills you up with just one, it’s not a Salteña. The elegance is in the scale.

2. The Filling: The Knife Test

If you see machine?ground meat, pass. A true Salteña is made with beef that’s hand?cut into tiny cubes just a few millimeters wide. You should clearly feel the texture of the meat fibers.

3. The Untouchables: Potatoes, Yes or No?

Potatoes: Always. In small cubes that almost melt in your mouth.

Olives or raisins: Absolutely forbidden. In Salta, putting raisins in an empanada is practically a gastronomic exile offense.

4. The “Dripping” Phenomenon

A dry Salteña is a technical mistake. On the very first bite, the juices—thanks to the beef tallow and the resting time of the filling—should start to ooze out. That’s why you eat them “with legs apart,” so you don’t stain your shoes.

5. The Oven: Leopard Spots

The dough should have those small dark spots (“char marks”) that only come from a very hot oven. If the crust is pale and uniformly colored, it needed more heat.
