The perfct pairing

If you already have the perfect empanada and the Llajua Sauce ready, the next question is: what goes in the glass? When we talk about Salta, we have to talk about its high?altitude wines. Pairing here isn’t optional; it is part of the heritage.

1. The White: Torrontés (The Classic Match)

Torrontés from Cafayate is the historic partner of the Salteña empanada.

  • Why does it work so well? Its floral notes (jasmine, orange blossom) and vibrant acidity play beautifully against the heat of the llajua and the richness of the beef tallow. It’s a contrasting pairing that refreshes your palate after every bite.

2. The Red: High?Altitude Malbec

If you prefer reds, look for a Malbec from the Calchaquí Valleys in Salta?

  • Why does it work? Unlike many Malbecs from Mendoza, Salta’s high?altitude style tends to be more structured, with spicy notes and a touch of black pepper. That power stands up perfectly to the intense flavor of knife?cut beef and the cumin in the filling.

3. The Rebel: Tannat

For those who want something bolder, a Tannat from Salta is a hidden gem. It’s a wine with plenty of personality and firm tannins that pairs wonderfully with the juiciness of an empanada straight out of the oven.

Serving Tips

    • Torrontés: Serve well chilled, around 46–50°F (8–10°C).?

    • Reds: Don’t let them get too warm; about 61°F (16°C) is ideal so the alcohol doesn’t stand out too much, especially in a warm climate.?
